Air Fryer Loaded Baked Potato Slices

These homemade air fryer potato slices are loaded with melted cheese, crispy bacon, green onion and sour cream.

  • 1 russet potato large
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • ½ teaspoon garlic powder
  • 1 cup shredded Colby Jack cheese
  • 2 slices bacon cooked and crumbled
  • ½ cup sour cream
  • 1 green onion sliced


  • Start by preheating your air fryer to 400 degrees Fahrenheit and setting the timer for 12 minutes.
  • While the air fryer heats up, slice the potato into ¼ inch thick slices.
  • To a medium bowl, add the potato slices and drizzle them with olive oil. Then add the salt, pepper, and garlic powder. Stir until the potato slices are well coated.
  • Add the potato slices to the air fryer in a single layer and cook for 12 minutes, flipping them halfway through.
  • Once the potatoes are done, remove the basket from the air fryer and add a pinch of cheese to each potato slice, then a few bacon pieces, and top with a little more cheese. Air fry for another 1-2 minutes until the cheese has melted.
  • Remove the potato slices from the air fryer, place on a serving dish, and top with sour cream and green onions.

Oven Instructions:

  • Preheat oven to 400 degrees Fahrenheit.
  • Prep the potatoes as indicated above.
  • Once the oven is preheated, place the potato slices in a single layer on a baking sheet. Bake for 20-25 minutes until slightly brown on the outside and tender in the middle. Be sure to turn them over halfway through.
  • Once the potatoes are done, top the potatoes with bacon and cheese and place back in the oven until the cheese has melted. This is usually about 5 minutes.
  • Remove from oven and top with sour cream and green onions.


*Be sure to cut the potato slices the same thickness to ensure that they all cook evenly.

*Cut slices at least ¼ inch thick, anything thinner will cook faster and become hard like a potato chip.

*Store leftovers in the refrigerator in an airtight container for up to 4 days (minus the sour cream).

*Reheat in the air fryer at 360 F for 1 to 2 minutes until warm.

*Put the potatoes into the air fryer basket in a single layer. This will allow for the potatoes to cook evenly.

*If your air fryer has a broil option like my Instant Vortex Plus you can use that to melt the cheese if you prefer.
