Blueberry Protein Crumble Recipe

Ingredients:

  • 1 cup blueberries (frozen works fine)
  • 1/2 tsp cornstarch
  • 1/2 tsp lemon juice
  • 1/3 cup oats
  • 1 serving Promix vanilla whey protein powder
  • 1/2 tsp cinnamon
  • 1/2 tbsp honey or maple syrup
  • A pinch of salt
  • 1–2 tbsp water

Instructions:

  1. Prepare the Blueberry Mixture:
    • In a microwave-safe bowl, combine the blueberries, cornstarch, and lemon juice.
    • Stir well to coat the blueberries evenly.
    • Microwave the mixture for 1 minute to create a warm, thickened base.
  2. Make the Crumble Topping:
    • In a separate bowl, mix the oats, protein powder, cinnamon, honey (or maple syrup), and a pinch of salt.
    • Gradually add water, a splash at a time, until the mixture reaches a crumbly texture.
  3. Assemble and Cook:
    • Spread the crumble topping over the blueberry mixture in the bowl.
    • Microwave the assembled dish for another minute to heat everything through and meld the flavors.
  4. Optional Topping:
    • Add a dollop of Greek yogurt and a sprinkle of cinnamon on top for extra creaminess and flavor.
  5. Serve and Enjoy:
    • Let it cool slightly, then dig in! This quick and nutritious treat is perfect as a snack or dessert.
