This easy and healthy Crockpot Chicken Taco Soup is a perfect dish for meal prep or a cozy dinner. Packed with lean ground chicken, hearty vegetables, and delicious seasonings, this soup is light yet filling. Plus, it’s a low-point option for those following Weight Watchers!

Ingredients:

  • 1 lb ground chicken (weighed raw)
  • 3.5 cups chicken broth
  • 1.5 cups tomato sauce (use a zero-point veggie tomato sauce if preferred)
  • 28 oz can diced tomatoes
  • 15 oz can black beans (optional, I don’t use beans, but feel free to add them)
  • 1/2 cup diced green bell peppers
  • 1/2 cup diced red bell peppers
  • 1 cup diced red onion
  • 1 cup frozen corn
  • 2 garlic cloves, diced
  • 30 g taco seasoning (use your preferred brand)
  • 1 tsp onion powder
  • Dash of salt & pepper

Instructions:

  1. Cook the Ground Chicken:
    In a frying pan, cook the ground chicken until browned, then drain any excess fat.
  2. Prepare the Soup:
    Transfer the cooked chicken to your crockpot. Add the tomato sauce, diced tomatoes, and chicken broth.
  3. Add the Veggies and Seasonings:
    Stir in the diced bell peppers, red onion, garlic, and corn. Mix in the taco seasoning, onion powder, salt, and pepper.
  4. Cook:
    Set the crockpot to high and let it cook for 4 hours. Alternatively, cook on low for 7-8 hours.
  5. Serving:
    The soup makes 12 servings, with each serving being about 1 cup. If you’re using the taco seasoning pack with 3SP, it will contribute 1SP for every 4 servings.
