A Breakfast Game Changer

If you’re looking for a new and easy healthy breakfast, Overnight Weetabix is a must-try! It’s ideal for meal prep, saving you precious time in the morning. Just grab a spoon and dig in!

Similar to Overnight Oats, you start with a base and then customize it with various toppings and additions. My current favorite is Tiramisu Overnight Oats! Other popular food trends worth trying include Grinder Salad, Custard Toast, Baked Oats, and of course, the Baked Feta Pasta!

I eat overnight oats daily, so when I saw the overnight weet-bix trend on social media, I had to give it a try. It’s not only tasty but also keeps you full for hours.

What is Weetabix?

Weetabix (or Weet-bix in Australia and New Zealand) are whole grain wheat biscuits commonly eaten as a breakfast cereal. They’re traditionally served with milk and toppings like fruit and honey. You can also eat them dry or use them in other recipes. Being Australian, I grew up eating Weet-bix.

Ingredients

  • Weetabix/Weet-bix: The star ingredient! Rolled oats can be substituted if needed.
  • Milk: Used for soaking the Weetabix. Almond milk is my preference, but oat milk, soy milk, or regular milk work too.
  • Maple Syrup/Honey: Adds sweetness to the base. Double the amount if you prefer a sweeter breakfast. Other options include agave, brown sugar, or coconut sugar.
  • Banana: Sliced and layered for extra nutrients and fiber.
  • Yogurt: Used as the top layer. I prefer plain yogurt and add toppings for flavor. Use any type – Greek yogurt or a vegan alternative like coconut or cashew yogurt.

Toppings and Flavors

The topping possibilities are endless! Here are some ideas:

  • Biscoff: Use the spread and biscuit. Similar to a healthy Banoffee pie.
  • Berries: Blueberries, raspberries, strawberries, or blackberries.
  • Nut Butters: Peanut butter, almond butter, or hazelnut butter.
  • Protein Boost: Protein powder or high-protein yogurt.
  • Chocolate: Nutella or chocolate spread.
  • Other: Cacao nibs, granola, jam, kiwi, peaches, nectarines, apple, nuts, cookies/biscuits, caramel.

How to Make Overnight Weetabix

  1. Base Layer: Crush the Weetabix biscuits in a container or bowl. Add maple syrup/honey and milk. Mix and flatten.
  2. Yogurt Mixture: In a separate bowl, combine yogurt and melted Biscoff spread or maple syrup/honey. Whisk together.
  3. Layer: Add banana slices to the Weetabix layer and top with the yogurt mixture. Level the yogurt with the back of a spoon. (Add berries if making the berry version).
  4. Refrigerate: Cover and refrigerate for a few hours or overnight.
  5. Serve: The next morning, top with crushed Biscoff biscuit (or honey drizzle) and enjoy!

Tips and Tricks

  • Add crunchy toppings (granola, cacao, nuts) in the morning for crispness.
  • Use unsweetened plain yogurt and add flavoring to control sweetness.
  • Make overnight weetabix the night before or a few hours before eating. Longer refrigeration can make it mushy.

Ingredients

  • 2 Weetabix or Weet-bix
  • ½ cup milk – I’ve used almond milk
  • 1 tsp maple syrup or honey
  • ½ banana sliced
  • 100 g dairy free yogurt or Greek yoghurt

Biscoff Overnight Weetabix

  • 1 tbsp melted biscoff spread
  • 1 crushed biscoff biscuit

Berry Overnight Weetabix

  • 12 tsp maple syrup or honey
  • Handful mixed berries

Instructions

  • Crush up the 2 Weetabix biscuits in a container or bowl. Add maple syrup or honey and milk of choice, mix together and flatten the mixture to make an even layer

Biscoff Overnight Weetabix

  • In a separate bowl, add the yogurt and either the melted biscoff spread and whisk together
  • Add the banana slices on top of the Weetabix layer and top with the yogurt

    Using the back of a spoon, level out the yogurt on top

  • Place the lid on and refrigerate a few hours or overnight. To serve, top with a crushed biscoff biscuit and enjoy!

Berry Overnight Weetabix

  • In a separate bowl, add the yogurt a teaspoon of maple syrup/honey and whisk together
  • Using the back of a spoon, level out the yogurt on top. Then add the mixed berries on top
  • Place the lid on and refrigerate a few hours or overnight.

    Right before serving drizzle extra honey on top and enjoy your Overnight Weetabix!
