Excitedly, I walked into the bakery to order a Cornish pasty. To my surprise, the staff informed me they couldn’t call them “Cornish pasties” anymore unless they were made in Cornwall. Instead, they offered me a “traditional pasty,” which was essentially the same thing.

With a chuckle, I ordered two traditional pasties for Dominic and me. It was a delightful moment that reminded me how much I love these baked goods—and how perfect they are for air fryer cooking.

  • 200 g leftover Instant Pot beef stew
  • 500 g air fryer pie crust
  • Egg wash (for brushing)
  • 1 tsp mixed herbs
  • Salt & pepper

Instructions

  1. Prepare the Filling:
    • Drain the leftover beef stew of any excess liquid.
    • Season the stew with salt, pepper, and mixed herbs.
  2. Prepare the Pastry:
    • Roll out the pastry dough.
    • Use the bottom of the pasty maker to cut out circles.
    • Roll the pastry again if needed to get three circles.
    • Place the pastry circles on a floured work surface.
  3. Assemble the Pasties:
    • Place one pastry circle in the pasty maker.
    • Add the seasoned stew filling to one half of the circle, being careful not to overfill.
    • Close the pasty maker and press down firmly to seal and create the signature pasty pattern.
    • Repeat the process for the remaining pastry circles.
  4. Cook in the Air Fryer:
    • Line the air fryer basket with foil.
    • Brush the tops of the pasties with egg wash.
    • Air fry at 200°C (400°F) for 8 minutes.
  5. Serve:
    • Enjoy the pasties hot as a main course or a hearty snack.

  • Leftovers: This recipe is an excellent way to repurpose leftover beef stew. While dumplings often disappear quickly, the remaining stew makes for a delicious pasty filling.
