A Classic Recipe, Updated
This no-bake peanut butter bar recipe has been around since I started blogging. I’ve now updated it with a new video to show you just how easy they are to make.
Is Peanut Butter Keto?
This is a common question. The answer lies in understanding what the keto diet really is.
Keto is any diet that keeps you in ketosis. Food itself isn’t “keto.” Small amounts of any food won’t kick most people out of ketosis. Even a bite of banana or potato could fit into a keto diet if you manage your macros carefully.
However, I don’t recommend this. Small amounts of high-carb favorites can trigger cravings and lead to overeating.
Some people avoid peanut butter on keto because certain “programs” and “coaches” have it on their “naughty” lists. Peanuts are technically legumes, similar to beans.
But peanuts are a low-carb food choice. If you do keto your own way (whatever keeps you in ketosis), peanuts and peanut butter can be part of your diet in moderation.
I don’t recommend eating it by the spoonful daily, but an occasional keto peanut butter treat is usually fine.
How to Make Keto Peanut Butter Bars
These no-bake bars are incredibly easy to make. They require only 6 basic ingredients and come together in about 15 minutes.
Peanut Flour Explained
I often get questions about peanut flour. Here’s what you need to know:
- Peanut flour is roasted peanuts ground into a fine powder, intensifying the peanut butter flavor.
- Its powdery consistency gives these bars their unique texture. The dough is like cookie dough – soft enough to press into a pan but firm at room temperature.
- Peanut butter powder and PBFit (sugar-free version) work just as well. Avoid added sugars.
- Almond flour can be used, but it has a higher fat content. You’ll need more to achieve the same texture. A combination of 2 cups almond flour and ¼ cup coconut flour is recommended.
The dough should hold together and feel like cookie dough or play dough, regardless of the flour you choose.
How to Store Keto Peanut Butter Bars
These bars can be made well in advance. Store them in the fridge in a covered container to prevent them from becoming too soft. They stay firm at room temperature for a few hours (unless it’s very hot). The chocolate topping can melt in warm weather.
They can last up to 3 weeks in the fridge. For freezing, wrap them tightly in plastic wrap to avoid freezer burn. They can be frozen for several months.
