How to make the Basic Mascarpone Cream!

Ingredients for 6 people:

  • 200 g mascarpone
  • 2 eggs
  • 3 tablespoons of powdered sugar
  • 200 g of crème fraîche

Preparation :

  1. In a bowl, beat the eggs with the sugar on medium speed for about 10 minutes until the mixture is light, fluffy and light in color. Set aside.
  2. In another bowl, whisk the mascarpone with the sugar for 2 to 3 minutes until creamy. Set aside.
  3. Finally, whip the cream in a bowl until it reaches a semi-firm consistency.
  4. First add 1 tablespoon of frothy eggs to the mascarpone, stirring quickly,
  5. then gradually incorporate the rest of the frothy eggs, making slow movements from bottom to top using a spatula.
  6. Then add the cream all at once to the mixture and stir slowly using the spatula, moving from bottom to top.
  7. To this base, you can add for example a coffee cream, a chocolate cream or a red fruit coulis.
  8. First add 1 tablespoon of the chosen flavor, mixing quickly, then add the rest, stirring slowly.
  9. Pour the mixture into a cake tin previously covered with plastic wrap.
  10. Smooth the surface, close with plastic wrap and place in the freezer for at least 3 hours.
  11. Serve and enjoy!
