  • Cajun Seasoning

  • 2 teaspoons 2 smoked paprika

  • 1 teaspoon 1 oregano

  • 1 teaspoon 1 thyme

  • ½ teaspoon garlic powder

  • ½ teaspoon onion powder

  • ¼ teaspoon cayenne pepper

  • ¼ teaspoon black pepper

  • ¼ teaspoon salt

  • Chicken Pasta

  • 1 tablespoon 1 olive oil

  • 1 tablespoon 1 butter

  • 1 lb. 1 boneless, skinless chicken breast, cubed

  • 1 1 yellow onion, diced

  • ½ lb. penne pasta (uncooked)

  • 1 1 can fire-roasted diced tomatoes (with juices)

  • 2 cups 2 chicken broth

  • 2 oz. 2 cream cheese

  • 3 3 green onions, sliced (for garnish)

Directions

  • In a small bowl, mix all the Cajun seasoning ingredients. Toss the cubed chicken in the seasoning until evenly coated.
  • Heat olive oil and butter in a large deep skillet over medium-high heat. Once hot, add the seasoned chicken and sear for 2 minutes per side until browned. The chicken does not need to be fully cooked.
  • Add the diced onion and sauté for 2 more minutes, stirring occasionally to release moisture and deglaze the pan.
