One of my favorite things to do is prepare a batch of cookie dough and freeze it in individual portions. This way, I can bake just one or two cookies whenever I get a craving. There’s nothing better than having a fresh-baked peanut butter cookie ready in minutes!

Ingredients

  • ½ cup unsalted butter, softened
  • ½ cup peanut butter (chunky or creamy)
  • ½ cup granulated sugar
  • ½ cup brown sugar (light or dark)
  • 1 large egg
  • 1 ½ cups all-purpose flour
  • ¼ teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt

Instructions

  1. Preheat the air fryer to 350°F (175°C).
  2. Mix Wet Ingredients – In a large bowl, cream together the butter, peanut butter, granulated sugar, brown sugar, and egg until smooth.
  3. Mix Dry Ingredients – In a separate bowl, whisk the flour, baking soda, baking powder, and salt.
  4. Combine the dry mixture with the wet ingredients and stir until well incorporated.
  5. Shape the dough into 2-inch balls and place them 3 inches apart on a parchment paper liner for the air fryer.
  6. Press each dough ball with a fork dipped in sugar, creating a crisscross pattern. Flatten the cookies to about 2 inches in diameter.
  7. Air Fry for 8 minutes or until golden brown.
  8. Cool – Transfer the cookies to a wire rack immediately to cool.
