Step-by-Step Instructions

1. Prepare the Meringue

  1. Separate the egg whites from the yolks and place them in a clean, dry mixing bowl. (Save the yolks for Garlic Mayonnaise or Lemon Curd!)
  2. Whip the egg whites at medium-low speed for about 2 minutes until foamy.
  3. Add the cream of tartar (or apple cider vinegar) and continue whipping.
  4. Gradually add the powdered sweetener, one tablespoon at a time, while continuing to beat.
  5. Whip until stiff peaks form—the mixture should be glossy and hold its shape.
    Tip: Allulose works best because it caramelizes smoothly without leaving an aftertaste or crystallizing after chilling.

2. Shape the Pavlova

  1. Place a round piece of parchment paper inside your air fryer basket.
  2. Spoon the meringue mixture onto the parchment, forming a round shape.
  3. Using a spoon or spatula, create a nest in the center, leaving a raised edge to hold the cream and berries.

3. Air Fry the Meringue

  1. Set your air fryer to 120°C / 250°F and bake for 40 minutes, checking once or twice.
    • Note: If your air fryer has a “Roast” setting, use that.
    • For oven baking, see traditional Pavlova recipes.
  2. Once baked, turn off the air fryer and let the Pavlova cool completely before removing and assembling.

4. Prepare the Whipped Cream & Assemble

  1. Whip the heavy cream with 2 tablespoons of powdered Allulose and vanilla extract until soft peaks form.
  2. Once the Pavlova has fully cooled, top it with whipped cream and fresh berries.
  3. Garnish with fresh mint for an extra festive touch.

5. Serve & Store

  • Serve immediately for the best texture.
  • If storing, keep the baked meringue in an airtight container in the fridge for up to 3 days.
