Crock Pot Green Chile Chicken Posole

Who doesn’t love a great crock pot recipe? Posole is one of those great crock pot foods. Here in New Mexico we eat posole typically with pork and red chile, this recipe is not a traditional New Mexican recipe. I used green chile and chicken. It makes a great meal for the entire family.

Ingredients

  1. 1 1/2 pounds chicken breast, cut into pieces (3 -4 medium chicken breasts)
  2. 1 small onion, diced
  3. 1 (32 ounce package) frozen posole, thawed and rinsed
  4. 2 garlic cloves, minced
  5. 8 cups chicken stock
  6. 4 cups water
  7. 1 tablespoon salt
  8. 1 tablespoon dried oregano
  9. 1 teaspoon cumin
  10. 2 cups mild chopped green chile

Instructions

  1. Add all ingredients into crock pot.
  2. Mix well.
  3. Cook on low heat for eight hours.
  4. Serve into individual bowls. (About 2 cups per person.)
  5. Garnish with fresh lime wedges, cilantro, fresh jalapeno slices, and avocado.
  6. Enjoy!
