This easy and flavorful spinach dip is a lighter twist on a classic favorite. Perfect for snacking or sharing at parties, it’s a quick recipe that comes together with just a few simple ingredients.

Ingredients

  • ½ cup nonfat plain Greek yogurt
  • 1 Tbsp fat-free mayo (optional)
  • 2 Tbsp Knorr dry Vegetable Recipe Mix
  • ⅕ block frozen spinach (approximately ⅓ cup after squeezing out water)
  • ¼ cup chopped water chestnuts

Instructions

  1. Thaw the Spinach

    • Cut off approximately ⅕ of the frozen block of spinach and set it aside to thaw at room temperature or microwave briefly to speed up the process.
  2. Prep the Water Chestnuts

    • Finely chop the water chestnuts for a satisfying crunch in every bite.
  3. Drain the Spinach

    • Once the spinach is thawed, squeeze out as much water as possible.
    • Pro Tip: Use a paper towel or a clean kitchen towel to squeeze the spinach dry—this prevents excess moisture and keeps your dip from becoming watery.
  4. Mix the Ingredients

    • In a medium bowl, combine the Greek yogurt, fat-free mayo (if using), Knorr dry Vegetable Recipe Mix, squeezed spinach, and chopped water chestnuts.
    • Stir until all the ingredients are evenly mixed.
  5. Chill the Dip

    • Cover the bowl and refrigerate the dip for at least 30 minutes before serving.
    • Tip: For a more robust flavor, let the dip sit in the fridge overnight to allow the ingredients to meld together beautifully.

Tips & Tricks

  • Spinach Handling: To make cutting frozen spinach easier, run the block under warm water for a few seconds before slicing.
  • Consistency Check: If the dip feels too thick after mixing, add a teaspoon of Greek yogurt at a time until you reach your desired texture.
  • Add a Zing: For an extra burst of flavor, sprinkle a pinch of garlic powder or onion powder into the mix.

Serving Suggestions

  • Pair with fresh veggies like carrot sticks, cucumber slices, or celery for a low-calorie snack.
  • Enjoy with crackers, pita chips, or even breadsticks for a heartier option.
  • Great as a sandwich spread or as a topping for baked potatoes.

Storage Notes

  • Store the dip in an airtight container in the refrigerator for up to 3 days.
  • Always stir the dip before serving to maintain its creamy consistency.
